Couscous Salad

An easy to make dish to enjoy whether you’re dining alfresco or in need of a quick but nutritious bite for lunch.

Method

Prepare the Couscous: Boil the kettle and pour 150ml of boiling water into a measuring jug. Place the couscous in a large bowl and season. Pour the boiling water over the couscous and stir once. Cover with a clean tea towel and leave to stand whilst preparing the rest of the dish.

Prepare the ham and mushroom mixture: Slice the onion into wedges and dry fry in a large non-stick frying pan. Slice or tear the mushrooms into pieces and add them to the pan and fry them for 5 minutes. Tear or chop the ham into small pieces and stir into the mix and dry fry for a further few minutes.

Fluff up the couscous with a fork and add the mushroom and ham mixture. Carefully fold in The Laughing Cow Light triangles to the hot mixture and add the chopped parsley.

Season to taste.

Serve with crusty bread.
Garnish with a lemon chunk and chives.

Tip: For a spicy alternative, at the beginning stir 1 tsp of crushed curry spices into the dry couscous.

5g flat leaf parsley, roughly chopped

2 slices of crusty bread
1 lemon cut into chunks
