Bagel Rarebit
A great low fat version of the lunch time favourite, cheese on toast.
Method
Preheat the grill. Arrange the bagels on a grill pan and grill for 5 minutes or until browned on both sides.
Mash two of The Laughing Cow Light triangles in a bowl with the pesto. Spread thinly over each toasted bagel.
Create layers with the tomato slices and remaining cheese. Season with salt and pepper to taste and grill for 10 minutes.
Serve with a few rocket leaves.
Tip: For more flavour add a few sliced mushrooms to the bagel before grilling, or poach an egg and place on top of the bagels just before serving.
